Maple Walnut Pie

This favourite recipe from egg farmers Elwyn and Pauline Embury of Newburgh tastes like a cross between a butter tart and a pecan pie!

Ingredients

Unbaked 9-inch (23 cm) pie shell

  • 3 eggs, lightly beaten
  • 1 cup (250 mL) packed brown sugar
  • ½ cup (125 mL) quick cooking oats
  • ½ cup (125 mL) chopped walnuts
  • ½ cup (125 mL) evaporated milk
  • ½ cup (125 mL) maple syrup
  • ¼ cup (50 mL) butter or margarine, melted
  • 1 tsp (5 mL) vanilla or maple extract
  • Pinch salt

Directions

Combine eggs, brown sugar, oats, walnuts, evaporated milk, maple syrup, butter, vanilla extract, and salt in a medium bowl. Whisk together until well blended. Pour filling into pie shell.

Bake in a preheated 350°F (180°C) oven until set, 35 to 40 minutes. Let cool, then chill before slicing.
